Sichuan Pix­i­an chilli bean paste — douban­jiang — is an intense­ly spicy blend of chill­ies, and pre­served broad beans. This Pix­i­an broad bean paste is from Pix­i­an in Chi­na’s Sichuan province, famed for its chilli bean pastes. It’s also known sim­ply as fer­ment­ed broad bean paste or Sichuan chilli paste.

Used in West­ern China’s tra­di­tion­al­ly spicy dish­es such as mapo tofu or fish fra­grant aubergines, this ingre­di­ent embod­ies the char­ac­ter­is­tic Mala numb­ing and tin­gling spice from this region.
