The Philippines heavily relied on imports of tomatoes and with a shortage during the war, a clever lady created the condiment using the local ingredients around her-Bananas. Zosima Fulwell aka Mama Z came from a background in hospitality working in kitchens before deciding to set up Mama Z full time in 2017. Zos refers to herself as a “Third Culture Kid” due to growing up in the Middle East and is now bringing Manila to Manchester, taking inspiration from her Filipino heritage and food memories growing up. The name “Mama Z” comes from the fact Zos has always enjoyed cooking and loves to share this with her friends around her! Filipinos love to feed and look after people and this is definitely something Zos says she has inherited.
The recipes and dishes passed through her family kitchens is what Zos enjoys cooking and shares through her street food, supper clubs and pop up catering events. Food is always about memory and Zos remembers fondly eating Filipino food with her family and has since gone back to The Philippines to take inspiration and reconnect with her roots.
There is always a bit of Zos’s personality in every dish, making it her own and authentic to her. Mama Z is always striving to create delicious Filipino Vegan and veggie dishes so that Filipino food is accessible to all and everyone can enjoy the flavours of the Philippines.
