The Philip­pines heav­i­ly relied on imports of toma­toes and with a short­age dur­ing the war, a clever lady cre­at­ed the condi­ment using the local ingre­di­ents around her-Bananas. Maria Orosa is to thank for cre­at­ing this sauce dur­ing WW2 and is a house hold name recog­nised by many Fil­ipinos. Zosi­ma Ful­well aka Mama Z came from a back­ground in hos­pi­tal­i­ty work­ing in kitchens before decid­ing to set up Mama Z full time in 2017. Zos refers to her­self as a Third Cul­ture Kid” due to grow­ing up in the Mid­dle East and is now bring­ing Mani­la to Man­ches­ter, tak­ing inspi­ra­tion from her Fil­ipino her­itage and food mem­o­ries grow­ing up. The name Mama Z” comes from the fact Zos has always enjoyed cook­ing and loves to share this with her friends around her! Fil­ipinos love to feed and look after peo­ple and this is def­i­nite­ly some­thing Zos says she has inher­it­ed.
The recipes and dish­es passed through her fam­i­ly kitchens is what Zos enjoys cook­ing and shares through her street food, sup­per clubs and pop up cater­ing events. Food is always about mem­o­ry and Zos remem­bers fond­ly eat­ing Fil­ipino food with her fam­i­ly and has since gone back to The Philip­pines to take inspi­ra­tion and recon­nect with her roots.
There is always a bit of Zos’s per­son­al­i­ty in every dish, mak­ing it her own and authen­tic to her. Mama Z is always striv­ing to cre­ate deli­cious Fil­ipino Veg­an and veg­gie dish­es so that Fil­ipino food is acces­si­ble to all and every­one can enjoy the flavours of the Philip­pines.
